Sita Ram Diwan Chand began as a humble food cart in Paharganj, started by Sita Ram Kohli after he arrived in Delhi from Lahore around Partition. The single dish that built its reputation is chole bhature, with the bhature stuffed with cottage cheese and coriander and cooked on a tawa rather than deep fried, giving it a lighter texture than most versions found elsewhere in the city. The chole is served with a side of spiced potatoes, pickle, and green chillies, rounding out what is considered by many to be Delhi's definitive version of the dish. The shop grew from a cart into a proper outlet with seating, and later generations of the Kohli family have expanded it into a small chain across Delhi. It remains a breakfast institution, drawing everyone from students to celebrities.
